Gravity Forms Limit Dates is a WordPress plugin that controls the selectable dates in Gravity Forms Date Picker fields. You can set minimum and maximum dates, choose which weekdays are allowed, and add exceptions for individual dates. Settings are managed from a Perks tab on the date field.
